Biscuits & gravy
Classic southern breakfast
For the biscuits
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- ⅓ cup butter
- 1 cup buttermilk
For the gravy
- 1 lb sausage
- 1 tablespoon butter (butter)
- ¼ cup flour
- 2 cups whole milk
- 1 teaspoon black pepper
- ½ teaspoon sage
For the biscuits

Preheat oven to 425°

Whisk together all dry ingredients in a large bowl.

cut in the butter and mix well, until mix is coarse and crumbly

Add buttermilk and mix well

turn dough onto lightly floured surface and knead 15-20 times

roll out to 1" thick, then cut into circles using biscuit cutter. Place biscuits on baking sheet lined with parchment. Bake for 15-20 minutes or until golden.
For the gravy

Place a skillet over medium high heat. Add the sausage and cook until browned.

Add the butter and cook until melted. Add the flour and mix thoroughly.

Reduce heat to medium and add the milk. Cook, stirring occasionally, until gravy thickens.

Add the pepper and sage, and simmer for 5 minutes.

Serve over warm biscuits
