Elotes
Traditional Mexican street corn
- 4 ears Corn (Shucked and cleaned)
- 1 Cup Mayonnaise
- 1 Cup Cotija cheese ((may sub feta or queso fresco))
- Tajín seasoning
- Fresh cilantro (for garnish)

Bring a pot of water to a rolling boil over high heat

Place the corn in the pot and boil for 6 minutes

Remove the corn from the water and allow to cool for 2-3 minutes

Slather each ear liberally with the mayonnaise

Sprinkle generously with the cheese

Season with Tajín seasoning and enjoy!
