Elotes – Mexican Street Corn

 

Elotes

Traditional Mexican street corn

  • 4 ears Corn (Shucked and cleaned)
  • 1 Cup Mayonnaise
  • 1 Cup Cotija cheese ((may sub feta or queso fresco))
  • Tajín seasoning
  • Fresh cilantro (for garnish)
  1. Bring a pot of water to a rolling boil over high heat

  2. Place the corn in the pot and boil for 6 minutes

  3. Remove the corn from the water and allow to cool for 2-3 minutes

  4. Slather each ear liberally with the mayonnaise

  5. Sprinkle generously with the cheese

  6. Season with Tajín seasoning and enjoy!
